Mighty Mango & Sweet Potato Muffins

"Muffins for the win! These tenderly sweet, nice and moisty ones are created using our newest Limited Edition Mighty Mango and Sweet Potato. As this is a vegan version of our STEADY powders, the muffin recipe is completely plant-based as well. "

Ingredients

SERVINGS 1
  • 200g Steady Standard Mighty Mango & Sweet Potato
  • 100g oat flour
  • 100g apple sauce
  • 50g peanutbutter
  • 250ml plant-based milk
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 2 tbsp flaxseeds
  • pinch of salt
  • 1/2 tbsp apple cider vinegar

Preparation

  1. Preheat the oven to 200 degrees Celsius or 390 Fahrenheit.
  2. Put together the Queal Steady, oat flour, salt, baking soda, baking powder and flaxseeds and make sure everything is mixed well.
  3. Now add the milk, nut butter and apple sauce. Whisk until you have a batter that is free of clumps.
  4. Add 1 tablespoon of apple cider vinegar to your batter now and carefully whisk until its divided well. Let rest for 5 minutes.
  5. In the meantime, grease your muffin tins if necessary.
  6. Use a spoon to divide the batter into all of your muffin tins.
  7. Place them in the middle of your oven and bake for about 30 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Let your muffins cool down a bit, make yourself a nice cup of tea or coffee, sit down and take a bite!
